Recipe Of The Day

This morning I had to get up early to make a triple batch of Tabbouleh for a large crowd. I love this salad so much that I crave it! As you can see in the above photo, it's very healthy and oh so yummy!!
So I decided to share the recipe with you. Hope you don't mind.

Tabbouleh

1/2 cup Bulgar (cracked wheat)
1 or 2 tomatoes, seeded and chopped
1 cucumber, peeled and chopped
2 green onions, chopped
2 cloves garlic, minced
1/2 cup fresh snipped parsley
3 Tablespoons fresh mint leaves, chopped
1 teaspoon salt
1/4 cup fresh lemon juice
1/4 cup olive oil

Place the cracked wheat in a bowl and cover with 1 cup boiling water. Soak for 30 min. Drain and squeeze well to squeeze out the excess water.
In bowl, combine all ingredients. Toss and refrigerate at least 4 hours. Toss before serving.

Makes 4 servings.

If you're on Weight Watchers, like I am, there is only 4 pts. in each serving.

I hope you all enjoy this! I know I will! I just made a batch for me too!!

  4. Thank you Cathy! I think you could probably even use couscous. But the original way is with Bulgar! Sounds good with quinoa too!
